Podcast 005: The Big Grill Festival

Before the bank holiday weekend I had a chance to catch up with Andy Noonan, one of the festival producers behind this year’s Big Grill Festival taking place in Dublin from 15-17 August. You can also follow the festival on Twitter here. In this short food podcast we take a look at the festival, what’s going to be happening across the three days and how it all came together. Since the recording last Friday, there’s been a few additions to the festival lineup. Adding to the smoke & fire on the weekend will be the Grill @ Donnybrook Fair, homemade sausage outfit Pig’s Tale, Bavarian lumpwood gang Fire Foods, California based rub & sauce specialists Red Dog foods & Frank’s hot sauce straight outta Louisiana. John Relihan’s team will be manning ‘Carnivore Corner’ cooking whole animals primitive style over open flames. At the complete other end of the spectrum the vegetarian options will include Diep Vietnamese salad, grill corn on the sheath, Kinara’s chick pea salad on naan & much more. On the beer front, joining Rascals, Trouble Brewing & Eight Degrees will be Dan Kelly’s Cider and the Brewtonic International Bar feat Punk IPA, Dale’s Pale Ale, Orpen’s Cider. Camden Town Helles, Founder’s Raspberry Ale & many more. Wineonline.ie will host the wine bar with a top selection of white & red wine, prosecco as well as some Daiquiri wines & sherry. Soft drinks will be manned by John Lemon Lemonades, while the infamous 3FE will handle the coffee brewing. Kildare) was set up by Aisling Larkin. With a masters in Food Product Development and Culinary Innovation behind her, Aisling has a strong belief and commitment to teaching young chefs to take control of their own eating and provides them with the skills to become independent and creative in the kitchen. Ahead of her involvement with this weekend’s Taste Of Dublin, I caught up with Aisling to find out a little more about the academy, what’s going to be happening at Taste and what she’s got planned for the summer with her incoming students. Giles Calver at Outstanding By Design Giles Calver is the focus of part two of the Outstanding By Design recordings. Well regarded for his landmark publication What Is Packaging Design, Giles’ talk to close out the Outstanding By Design event in Kilkenny last weekend looks in great detail at a wide variety of packaging forms, why they’re chosen, why the work or don’t work for a food product and why they work or don’t work for the end user. As a designer myself, it was great to hear the insights from someone like Giles and over the course of 40 minutes or so you can listen back to the session yourself. It took place on Saturday gone at Highbank Orchards in Kilkenny and featured a host of food producers and designers talking out their branding experience and experiences.
