Preheat the oven to 350 F. Lightly oil a 9"x5" loaf pan and set aside. 2. In a medium-sized mixing bowl, sift together the flour, sugars, baking soda, salt and cinnamon. 3. In a large mixing bowl, whisk together the soy milk and cider vinegar and let stand for 2 minutes. Add the mashed banana, canola oil, maple syrup, and vanilla extract, whisking until well combined. Add the dry ingredients to the wet, mixing until just combined (do not overmix!) Fold in the walnuts if using and pour the batter into the prepared loaf pan. Bake for about 1 hour, or until a toothpick inserted into the center emerges clean. Allow the bread to cool on a wire cooling rack for 20 minutes before serving. Makes 6 large/12 small Muffins Ingredients: 2 cups unbleached All Purpose Flour 1 and 1/2 teaspoons Baking Soda 1/2 teaspoon salt 2 Lemons for Lemon Zest 3/4 to 1 cup brown sugar 1 cup almond milk/soy 1/3 cup coconut oil 1 teaspoon lemon Extract 1 tablespoon white Vinegar 1/2 cup fresh OR Frozen Blueberries Directions: Preheat the oven to 375F Lightly grease your muffin pan. In a medium bowl, combine your flour, baking soda, salt and lemon zest In a large bowl, combine the sugar, milk, oil, extract, and vinegar. Mix this up real good! Add the dry ingredients to the wet ingredients, stir until just combined. Don't over stir. Gently fold in the blueberries using a rubber spatula. Fill your muffin tins about 2/3rds full. Bake until a wooden skewer inserted into the center comes out clean, about 22 minutes. Remove from the oven and let it cool for 5 minutes. Remove the muffins from the tins and set to cool on a wire rack. #epicBRUNCH
