Tacos and Convos

This is the lost episode of the podcast.  After 2 months of editing, and 3 months being lost...I have finally decided to release this podcast.  I really hope you enjoy this podcast, and hope to be doing more soon.  Apologies for anything we didn't correct during the podcast, tequila was involved.

In this episode of the podcast I have 2 co-founders of the Texas independent craft brewery Hop and Sting out of Grapevine, Texas.  This was a great episode with Brian and Jon, and they were great guests. We talk about the craft beer industry, their approach to charity, and just what is a white IPA all over plates of carnitas tacos. 

Bringing back some of my favorite recipes that do not require a lot of attention once cooking, but are an easy thing to cook in the event that you need to have plenty of food.  In this tasting notes episode I share some updates to the recipes I did for pork carnitas and I try barbacoa tacos for the first time on this podcast.  This is just a quick episode sharing some ideas I have for the recipe, techniques performed, or even cuts used....Enjoy!!

Hey everyone, just a simple welcome to July episode of the podcast.  Goals, news, and plans for the next 30 days...and plus some news regarding the podcast. 

In the last part of this podcast with Daniel, we start getting into the world of comics and how amazing it is, and he offers some of his words of wisdom to those that really want to start getting into the comic world. It really is a great part to the episode..hope you enjoy!

In part two of the podcast with Daniel we start getting into current happenings in movies to include cut scene from Capt. Marvel, Batman with Pattison, and some Swamp Thing talk.  We also start getting into the fun world of comics and other fun things. 

In part 1 of this episode I officially wrap up pork month with Chorizo and Chashu tacos with my friend Daniel. We talk about food, lessons learned from podcasting, and other small items.  This is part one, cause we recorded for a couple of hours, and I thought that would be too much to release not broken up.  So sit back and enjoy a relaxed conversation over some delicious tacos.  In the next part we start letting the nerd out with pop culture and comic talk. 

In this episode of the podcast we jump right into eating and providing tasting notes on one of my favorite tacos to date.  I decided that combining my two favorite foods, Japanese and Mexican, give it a little twist and make some Chashu & Chorizo tacos. Chashu is pork belly by the way, braised in a combination of Sake/mirin/Water/Soy Sauce, and it turned out amazing. We then go on to talk about Chelcey's limited movie watching history, going over Twister/Speed and GOT.

A quick test kitchen covering my first time making fresh chorizo from scratch.  I usually have this with some eggs, so thats what I did this time around, but this can also be eaten stand alone or as a topping. 

Welcome to May, we are going to do another month of pork tacos. Due to some awesome circumstances, and a slight computer malfunction, we have plenty of pork to work with and lots of room for tacos.  In this episode I outline the plans, and ideas for the month of May...just something short and sweet for yall. 

Finally the April episode of the podcast is out...only 6 days past due.  In this episode I have my friend Knox on, and we talk about everything from southern food, tacos, news, and some other off the wall topics, but regardless lots of laughs were had during this episode. I hope you get as much of a kick out of it as we did.
