She completed her B.S. in Dietetics from the University of Maryland, College Park followed by a clinically based Dietetic Internship at Johns Hopkins Bayview Medical Center. Erin is also a Certified Personal Trainer with the American College of Sports Medicine (ACSM) and has an extensive fitness background. Erin is also the owner of Nutrition by Erin, a virtual nutrition private practice. Not only does she help her clients suffering from food sensitivities, but she is also personally connected as she has suffered most of her life with symptoms related to her own issues with food sensitivities. After getting tested in 2013 and undergoing the LEAP protocol, Erin was able to heal her lifelong eczema as well as numerous digestive complaints. Last week marked the official beginning of fall. So to celebrate, I’m doing a show on apples, which to me go hand-in-hand with the fall season. And did I mention that I just finished up a very delicious Honeycrisp apple?  So, as with my last episode on olive oil, my purpose is not to provide you with a broad overview of apples but rather to focus on how to appreciate the aroma, texture and taste of apples.  But first I do want to provide you with 10 facts about apples so you can show off and be an apple know-it-all.  And then after these 10 fun facts, I’ll give you all the information you need to appreciate apples like a glass of fine wine! So, here is my Top Ten List of a random assortment of apple fun facts….and in the spirit of David Letterman, we’ll start with #10 and work our way down… #10 -The top 10 apple varieties sold in the U.S. are: Gala, Red Delicious, Fuji, Granny Smith, Honeycrisp, Golden Delicious, McIntosh, Cripp’s Pink/Pink Lady®, Braeburn, and Jazz®. #9 – There are about 7,000 varieties of apples in the world so even if you tried a different apple every day it would take you nearly 20 years to sample the entire spectrum.  Of this 7,000, about 100 varieties of apples are grown commercially in the United States.  There is a really cool website, https://www.orangepippin.com, that catalogs over 600 varieties of apples and includes tasting notes.  The website is named after England’s most famous apple variety: Cox’s Orange Pippin which is widely regarded as the finest of all dessert apples. #8 – Apples are the 2nd most consumed fruit in the US (second only to bananas!) American’s eat about 65 apples a year. #7 – Apples are a member of the rose family. Botanical name = Aplicus Rosacea.  The rose connection may seem strange until we remember that roses make rose hips, which are fruits similar to the apple. Other popular foods in this family include apricots, plums, cherries, peaches, pears, raspberries, and almonds. #6-  It takes about 36 apples to create one gallon of apple cider.  Cider is raw apple juice that has not undergone a filtration process to remove coarse particles of pulp or sediment. Historically, all cider was left in its natural state, unprocessed.  Airborne yeasts present on apple skins or cider making machinery start fermentation in the finished cider. Left on its own, alcohol develops and forestalls the growth of harmful bacteria. #5 – Ever wondered why apples float? It’s because 25 percent of their volume is made up by air.  The tradition of bobbing for apples began as a British courting ritual, popular among young ladies and their potential beaus. There were several variations of game: in one set of rules, each apple was assigned to a potential mate. The bobber would then attempt to bite into the apple named for the young man she desired. If it only took her one try, they were destined for romance. If she succeeded with her second attempt, he would court her but their love would fade. If it took three tries, their relationship was doomed. Another approach to the game was a race to be the first to bite an apple; the first to emerge successful would be the first to marry. #4 – Don’t peel your apples.  Two-thirds of the fiber and many of the healthy phytochemicals in apples are found in the peel.   What purpose do these phytochemicals have?  Several studies have specifically linked apple consumption with a reduced risk for cancer, especially lung cancer. A reduced risk of cardiovascular disease has been associated with apple consumption. Apple consumption has been inversely linked with asthma and has also been positively associated with general pulmonary health. Apple consumption may also be associated with a lower risk for diabetes. #3 – Apple seeds contain a cyanide compound. Luckily, the body can detoxify cyanide in small doses, and the number of apple seeds it takes to pack a lethal punch is so huge that even the most dedicated of apple eaters is extremely unlikely to ingest enough pips to cause any harm. #2 – You’ve no doubt heard the saying, “one bad apple can spoil the whole bunch.” Well, research studies agree! An apple that has been bruised from being dropped (or that has been damaged in some other way) will start to release unusual amounts of ethylene gas. This ethylene gas can pose a risk to other apples that have not been damaged and greatly decreases their shelf life. For this reason, it’s important to handle apples with tender loving care, and also to remove any damaged apples from groups of apples stored in bulk. #1 – There is only one apple native to North America—the crabapple.  Apples are believed to have originated in an area between the Black Sea and the Caspian Sea. Apples were introduced to North America by colonists in the 17th century, and the first apple orchard on the North American continent was planted in Boston by Reverend William Blaxton in 1625. The abundance of apple trees in America was helped largely by Johnny Appleseed, a folk hero and pioneer apple farmer in the early 1800’s. Although legend paints a picture of Johnny as a dreamy wanderer, planting apple seeds throughout the countryside, research reveals him to be a careful, organized businessman, who over a period of nearly fifty years, bought and sold tracts of land and developed thousands of productive apple trees.  He kept ahead of the new settlements in the early 1800’s and each year planted apple seeds farther west. Hope you enjoyed those 10 facts about apples.  I know that I elaborated quite a bit on them but wanted to give you some nice juicy tidbits!  So, now it’s time to move onto the part of the show where we learn how to appreciate apples like a glass of fine wine! Apple Appreciation 101 The overall flavor of an apple is dependent on the balance sweetness and sourness with a touch of bitter, the presence or absence of volatile aromatic compounds and some polyphenolic compounds contributing to astringent mouthfeels. The most common sensory information that you will see regarding apples is their ratio of sweetness to sourness.  All apples contain both of these basic tastes in varying degree.  The best depiction that I’ve found of this is a visual called the Spectrum of Apple Flavors from the Sage Fruit Company.  I’ll post this image in the show notes but it essentially places common apple varieties along a continuum from sweet to tart.  For instance, most sweet/least tart are Fuji apples and most tart/least sweet and Granny Smith apples.  Honeycrisp, my personal favorite is slightly more tart than sweet.  It is also important to know that sweetness does not always correlate to the actual sugar content in the apple, which is usually measured by something called Brix (an interesting aside on Brix is that my local Wegmans grocery store sometimes markets their fruit by sharing the Brix levels).  So, you can have an apple with a high sugar content (or high Brix) that is also very sour.  And sour taste suppresses our perception of sweet taste.  This is referred to as a basic taste interaction.  Another example of a basic taste interaction is putting sugar in coffee to make it less bitter.  The coffee still contains just as many bitter compounds, but we don’t perceive them as much since sweetness suppresses bitterness. So, to sum this up: when considering eating quality of apples, the relationship of sugars to total acids is often more informative than the sugar or acid contents separately. The types of sugars in ripe apples are mainly sucrose, glucose, and fructose in the approximate ratio 1:1:2. Apples tasting of honey often have more than the usual amount of fructose. This is seen in Golden Delicious apples that are fresh and ripe.  It should be noted that fructose, known as fruit sugar, is over 1.5 times sweeter than sucrose (the chemical name for white sugar).  Some volatile aromatic compounds can also contribute to a honey flavor and may enhance perceived sweetness.  We’ll talk more about these compounds in just a bit. Now, the main acid found in apples is known as malic acid. Malic acid is also found in wine, rhubarb, and grapes. It is sometimes used as an added flavoring agent to impart a tart taste to foods. The name malic is based on “malum,” the Latin word for apple.  Apples also contain acetic acid, also known as Vitamin C.  This is why apples are a good source of vitamin C. The other basic taste found in apples is bitter.  We normally don’t think of apples as bitter, but they are slightly bitter.  Bitter taste in apples comes from a wide range of polyphenolic compounds.  Polyphenols are a class of health promoting plant based chemicals.  Tannins, one type of polyphenols in apples, are also found in wine, especially red wine. Tannins provide bitterness as well as what is known as astringent mouthfeel, which is a drying or puckering sensation in the mouth.  Bitterness and astringency may sound like a bad thing, but in small amounts they contribute to the tasty complexity of the apple eating experience.   Bitterness and astringency is often strongest in or just below the skin.  This may be why many people like to peel their apples.  But remember, these bitter producing compounds are also extremely good for you! Now, the most interesting nuances of an apple’s flavor comes from the volatile aromatics released when smelling and chewing. Classes of these compounds include: esters (fruity), alcohols (fruity or earthy), aldehydes (appley and slightly grassy), and ethers and terpenes (perfumey).  There are over 200 distinct volatile aromatic compounds responsible for the subtlety of flavor within apples.  For instance, the four most predominate compounds that contribute to the flavor of a gala apples are methylbutyl acetate, butyl acetate, hexyl acetate and butanol.  The contributions of these singular chemicals as is relates to perceived flavor is not always straightforward but often an interplay of many. Some of these compounds contribute to flavors such as honey, earthy, floral, spicy, pear-like, fennel, strawberry, raspberry, melon, blackcurrant, green grassy, grape, banana, and violets.  Some of the flavors are characteristic of specific apple varieties.  But unfortunately the level of reporting regarding specific flavors in apples is not well documented and most apple tasting guides will focus on sweet vs. tart and levels of crispness and juiciness.  Some say that the Pink Lady variety has banana aromatics and the Cortland variety can by spicy and floral-like.   And these various flavors can be fleeting based on the freshness and storage condition of the apples.  My advice: take a bite, close your eyes and savor the flavor.  What flavors do you perceive.?  In fact, some experts suggest using a wine aroma wheel to provide guidance as to the wide array of flavors that can be perceived in apples.  I’ll also include a link to a wine aroma wheel in my show notes if you want to try this out. The composition of volatile flavor components changes with maturation and ripening.  When apples become overripe, flavors may be produced through enzymatic reactions forming free radicals.  Off-odors and -flavors appear typically towards the end storage life and include acetaldehydes, ethanol and reaction products from fungal activity.  Apples generally will start to take on moldy and fermented flavors while desirable flavors tend to go away. When it comes to eating enjoyment, texture is equally important to flavor.  There is almost nothing worse than biting into an apple that looks delicious and crispy on the outside only to get a big mouthful of grainy, tasteless, sawdust.  This phenomenon is known as “mealiness”.  Mealiness is when the “glue” holding the apple’s cells together gets weak. When this happens, a bite of apple will just disintegrate into individual cells when we chew instead of holding firmly together. To test for mealiness, try tapping the side of the apple: good ones will sound hollow while mealy ones will sound dense and dull.  Mealiness happens when apples are old or improperly stored. In addition to mealiness, experts evaluate apples on the following textural criteria: Hardness = the amount of force needed to bit into the apple. Hardness is also referred to as firmness.  A good continuum for hardness would be McIntosh apples (very soft) to granny smith (very hard/firm).  Generally speaking, harder/firmer apples hold up better in pies while softer apples are good for making applesauce. Crispy = hard but easily breakable; brittle, firm and fresh; not soft or wilted. Honeycrisp apples are probably the best example here. Juiciness = the amount of good tasting flavorful liquid in the mouth when chewing Sogginess = the amount of waterlike flavorless liquid in the mouth when chewing (I often find Red Delicious apples from my local gas station mini-mart to be soggy) Toughness of Peel = the amount of peel left in the mouth after 8 chew with molars Starchy = apples in which the carbohydrate has not fully converted to sugar. Try eating corn starch straight up to fully understand what the phenomena feels like in the mouth. Some tasting tips: Refrigerate Your Apples—But Don’t Eat Them Cold: Some fruit, including apples, release a gas called ethylene when ripening. Sticking apples in your fridge halts this process. To keep apples crisp—and texture is a key factor for enjoyment—refrigerate them.  Volatile aromatic compounds are easier to perceive at room temperature so leave them out for an hour or two before enjoying. Don’t Judge an Apple by Its Skin: You might not like the way an apple looks but you might like the taste.  Also, certain colors of skin may sway your opinion on how it tastes.  So a yellow apple could have a grape flavor and a red apple can have green grassy flavors. Fall is a great time to host an apples tasting party: Cut up several apples and blind code them so you don’t know the breed. Your support is much appreciated SHOW TRANSCRIPT… How to appreciate a good olive oil…. Olive oil is coming of age in America.  Much like wine in the 1970’s and craft beer in the 1990’s. Let’s take a deeper dive into a comparison with wine…..In 1970, Americans drank 1.31 gallons of wine per capita and just last year we consumed 2.83 gallons. That’s over a 100% increase.  Prior to the 1970’s, you could argue that few Americans knew much about wine…. most people ordered it as ‘red’ or ‘white’ or ‘pink’ or ‘dry’ or ‘sweet’.  Most probably couldn’t recognize a quality wine if they tasted one and terms like “Chardonnay” and “Cabernet” were intimidating and foreign. In fact, many people preferred “grapey” tasting sweeter poor quality wine!  It was in the mid-1970’s when Californian wine makers started to meet or exceed performance of European wine in international competitions.  Fast forward to today’s America: wine tasting parties and festivals are all the rage and average people throw around terms such as “mineral” and “jammy” when talking about wine. The same revolution is going on with olive oil today and I’m hopefully going to give you the some information to change your relationship and increase your appreciation of olive oil.  I think up until now, most people used olive oil because it’s a healthy cooking oil.  But not many people really taste and appreciate cooking oil.  It’s just something you throw in the pan to cook with.  I’m going to give you some information today so you can be on the cutting edge of the olive oil revolution. So, how much olive oil do Americans consume?  The average American consumes about 1 liter a year.  Our friends in Greece, Spain and Italy consume over 10 times this amount.  In fact, the average Greek consumed 17.9 liters of olive oil last year!!!!  And by the way, a liter is similar to the English measurement of a quart (roughly 4 cups).   But this number is projected to increase – – big time! And it’s not surprising that Spain, Italy, and Greece are the world’s biggest producers of olive oil.  In fact, the US currently produces less than 1% of the olive oil in the world.   But this is also changing –  and just like the wine industry took off in the California in the 1970’s, the same is happening right now for olive oil.  Up until now, European olive oil makers have traditionally sold their dregs to unsophisticated Americans, like those jug wines popular in the 1970’s.  I guess that they are catering to our palette.  A study from the University of California, Davis had found that 44% of consumers in the U.S. liked defects such as rancidity, fustiness (a technical term for something that smells like dirty gym socks), mustiness, and winey flavor in their olive oil. The study authors indicate this may be due to the large amount of defective olive oil labeled as extra virgin available to consumers. In other words, because there is such a large amount of defective oil in the market and people are used consuming it, they think that this is what all olive oil is supposed to taste like.  And to make matters worse, a similar study found that there is also some fraud involved in that more than 69% of extra virgin olive oil imported to the US does not meet international standards. “EVOO is extra-virgin olive oil. I first coined ‘EVOO’ on my cooking show because saying ‘extra virgin olive oil’ over and over was wordy, and I’m an impatient girl – that’s why I make 30-minute meals! – Rachael Ray” In case you are wondering what the standard is for extra virgin olive oil: EVOO implies that it comes from the first press of the olive and that it is unrefined – – this the high heat process that most vegetable oils go through.  It should contain no more than 0.8% free acidity, and is judged to have a superior taste, some fruitiness, and no defined sensory defects. Unfortunately, the study from UC Davis revealed that this is not often the case for the olive oil on our shelves here in America.   You can read more about this in a really interesting book called “Extra Virginity: The Sublime and Scandalous World of Olive Oil“, by Tom Mueller. So, what exactly is superior taste?  Most of us in America really have no idea what to look for in an olive oil.  And “free acidity” is one of those nerdy and scary food science terms.  “Free acidity” in olive oil is the result of the degree of breakdown of the triacylglycerols, due to a chemical reaction called hydrolysis or lipolysis, in which free fatty acids are formed.  OK – – this still sounds like technical food science jargon so let me break it down some more for you.  Let’s focus on the word “tri-acyl-glycerol’.  The word tri means “3”.  The “acyl” part are the fatty acids and the “glycerol” is the thing that hold them all together.  Imagine a lego set.  Let’s say you have 100 large legos, let’s call these the glycerols.  Then you have 300 smaller legos, let’s call these the fatty acids.  Now, attach 3 of the smaller fatty acid legos to each of the larger glycerol legos.  Now you have 100 triacylglycerols molecules made out of legos.  Now imagine putting all of these legos in a bag and shaking them up.  Some of the smaller legos would become detached from the larger legos. Tthese floater legos are just like the free fatty acids in olive oil.  And in this case, if just 3 or more small legos fall off we’d be out of standard for EVOO.  It’s a pretty big hurdle. When oil has a lot of free fatty acid floating around, it is said to be rancid.  Oil that’s just a little bit rancid will have a cardboard or putty flavor.  Oil that’s moderately rancid will be reminiscent of house paint, and oil that’s severely rancid will take on a fishy flavor.  Yummy!  Now, you probably are NOT going to notice much rancid flavors with only 1% or less free fatty acids but that is just how strict the standard is for EVOO! Now, when you do not refine an oil, it can go rancid more quickly. EVOO, which is unrefined, only has an 18-24 month shelf life. And once you open your oil, you’ll want to use it sooner than later. It is recommended to use up the oil within 30 to 60 days upon opening. Olive oil is highly perishable, but is generally said to be ‘good’ for two years from the date it was bottled (this will usually be the ‘Best By’ date). However, a better indicator of freshness is to go by its harvest date, which will tell you when the oil was actually made. Only select oils that have this information on the bottle. So, one way around meeting the low free fatty acid standard of 1% or less is to refine the oil.  And this process also removes much of the flavor in the oil.  This is why most vegetable type oils have little to no flavor.  So, if you get an EVOO that has a very mild flavor, it may have been refined or even adulterated with a lower cost refined oil such a canola or vegetable.  So, now you have an ‘olive oil’ that might pass the free fatty acid hurdle but still would not meet the taste requirements – which definitely takes more knowledge and training and can be a bit more subjective. So, what does real EVOO taste like?  If you are home, pause this podcast and go to your cupboard and pour a little EVOO into a cup and try it straight up.  I’m hoping you have some around.  Funny thing is, most Americans might not appreciate the taste and let me tell you why….good olive oil is BITTER! That’s right, you heard me clearly….it’s bitter!   Most people don’t like bitter tastes but bitter is a good thing coupled with the right amount of other flavors and mouthfeels.  Good EVOO will also make you cough and perhaps gag!  What!  That doesn’t sound good.  This is called “pungency” and is the peppery tingle you feel at the back of your throat.  This pungency is due to the presence of healthy antioxidants. Dr. Gary Beauchamp from the Monell Chemical Senses Center published an article in Nature that found oleocanthal as one of the compounds responsible for this pungent sensation.  Oleocanthal has similar properties to anti-inflammatory compounds such as ibuprofen.  Talk about food as medicine!  And lastly, good olive oil is fruity. Let’s not forget that olives are fruit so a good olive oil needs to have some degree of fruitiness. “So the perfect trifecta for a good olive oil is “Bitter Taste + Pungency in Throat + Fruity Flavor” The unique and sometimes robust flavor of high quality extra virgin olive oil is related to the presence of a large number of aromatic chemical compounds such as aldehydes, alcohols, esters, hydrocarbons, ketones, and furans.  Over one hundred types of compounds have been identified which contribute to the distinctive sensory characteristics that make extra virgin olive oil so unique.  Some specific examples are hexanal (green, grassy) and trans-2-hexenal (green, bitter).  Many of these flavor compounds decompose if temperatures during milling are too high or if the oil is refined.   And many of these compounds are health promoting so the less processed the olive oil, the more health benefits incurred. So, if you want to do an olive oil tasting event at home, I’ll be including the full evaluation ballot that is used by the University of California at Davis in the show notes.  I’ll also include a link to a very high quality EVOO from California if you want to purchase something that you know will be the real deal.  It’s from a company called California Olive Ranch whose one of the leaders in the budding California Olive oil industry. Here are some tips for hosting your own olive oil tasting event: When you try an oil, know that color is not a predictor of flavor. A golden-hued oil will not necessarily be buttery tasting. An intensely green oil would seem to suggest grassiness and pungency, but might be very mild on the palate. Even judges fall prey to color prejudices, which is why professional tasters use color-obscuring tasting glasses or special lighting, usually blue or brown.  To mask color cues at home, perhaps try the oils in white mugs or opaque cups and try not to look while you taste.  Sometimes, party stores will also sell colored plastic tumblers that you can use.  If you really want to be nerdy tape some blue cellophane to your sunglasses! It’s always fun to ‘blind code’ the sample so you don’t know what you are tasting.  Label each cup with a random 3-digit code but make sure to have the decoder nearby. You can use a grease pen (sometimes called a China marker) to label the cups. Cover the top of the cups with a saucer or heavy paper towel to capture aromas.  It’s always good form to smell first, then taste. Pour the same amount of oil into each cup.  I recommend about 1 T per serving so you have enough to smell.  Then try about 1 teaspoon in your mouth. Try samples one at a time, and allow at least 3 minutes between sample.  Rinse well with water and a bite of unsalted saltine cracker between each.  Limit the number of samples to 5 in one session. Take some notes or evaluate using a tasting sheet.  This will cue you into what type of flavors you are looking for.  The olive oil lexicon is quite large with words such as nutty, floral, buttery, tropical, banana, green banana, fresh cut grass, olive-like, artichoke, herbaceous, green apple, green tea, mint, eucalyptus, tomato leaf , spicy, woody, hay-like, bitter, rancid, winey, fusty, musty, muddy….whew! I need to catch my breath. While many professionals spit (expectorate) after evaluation, I recommend swallowing the oil so you get the full effect of the pungency at the back of the throat.  After all it’s good for you! If you are interested, there are 2 courses that you can take to become a competent olive oil taster.  Both of these are fairly hardcore and are meant for professionals and the extreme enthusiast. UC Davis has a 2-part series which they just finished up this past June.   Each course costs over $500 and the level 1 is a prerequisite to level 2.  In level 2, there is a deep dive into identify defects in olive oil and participants get a handy dandy ‘defects wheel’ which is a great visual.  I’ll include the link to purchase your own defects wheel which I believe costs about $17.  This would make a great resource for a tasting event. Olive Oil Times magazine just started a certificate course to become an “Olive Oil Sommelier”.  The 3-day class is this October at the International Culinary Center in New York and is unfortunately already sold out. And if you really want to geek out, there is a 388 page book titled “Olive Oil Sensory Science”.  It’s a graduate level food science textbook that sells for over $200 but I thought I’d just throw it out there in case anyone is interested! Episode 040: Rewiring Your Brain w/ Dr. Ski Chilton

In this tasty episode, I interview Dr. Ski Chilton, a professor in the department of physiology and pharmacology at Wake Forest School of Medicine, about his professional and humanitarian work. We specifically dive into his work with polyunsatured fatty acids and a few of his books, Inflammation Nation and the upcoming The Rewired Brain. Dr. Chilton aims to help people change their unconscious thoughts, essentially rewiring their brain, to help them achieve desired results; including sticking to a diet and exercise routine. After listening, I’m sure you’ll agree that Dr. Chilton is very fascinating!  Dr. Ski Chilton, PhD Dr. Ski Chilton is passionate about spending his time on earth providing solutions to make people’s lives better, easier, and more joyful. Consequently, his major accomplishments including science and research have focused on carrying out his passion of providing compassion to the world. From a science perspective, his over 130 publications have provided a more basic understanding of the cellular, molecular, and genetic events associated with inflammation and the diseases it causes. Specifically, he believes his most important scientific achievement is his team’s most recent work examining how genetic and epigenetic variations interact with human diets (especially the modern Western diet) to drive inflammation and inflammatory disorders (including cardiovascular disease and cancer) as well as psychiatric/developmental disorders (ADHD, autism spectrum disorder, and depression). Understandings from individualized- and population-based nutrition provide wide opportunities to help people that range from addressing racial/ethnic health disparities and to creating therapeutic foods that optimize immune system and brain development around the world based on genetic/epigenetic variation. From a humanitarian perspective, he has also been blessed to play leadership roles in two non-profit organizations, Heroes Helping Heroes and The Persecution Project that provide crisis relief, education and hope for victims of civil war, AIDs, genocide and religious persecution to people (particularly orphans) throughout Africa. In Sudan, The Persecution Project has played a key role in building sanctuaries in Darfur and the Nuba Mountains to provide populations escaping from genocide a place to hide. Third, he has had the extraordinary opportunity to impact hundreds of thousands of people lives by publishing five lay books focused on nutrition, diet, and physical and mental health including Inflammation Nation (Simon and Schuster) and The Gene Smart Diet (Rodale). Dr. Chilton is particularly excited about his book, The Rewired Brain (Baker Books) which addresses the issue of our unconscious minds, its capacity to negatively impact our lives, and how brain plasticity gives us the capacity to rewire and change our mind and thus our lives. Episode 039: Is Your Food Making You Sick?!? w/ Jan Patenaude

In this tasty episode, I interview Registered Dietitian and Certified LEAP Therapist, Jan Patenaude. Jan specializes in the field of integrative nutrition and is one of the pioneers working with blood testing to identify and treat food sensitivities. She specifically works with a blood test called MRT®, or Mediator Release Testing. MRT® is a blood test that quantifies the inflammatory response to 150 different foods & food-chemicals. I know we’ve all heard a lot about gluten as causing ill effects for a lot of people but Jan shares a fascinating story about a patient who was deathly ill from an apple sensitivity!  Jan will also shed light on the difference between a food allergy, food intolerance, and food sensitivity.  Jan Patenaude, RD, CLT Jan Patenaude, RD, CLT is the first Certified LEAP Therapist and LEAP Mentor who has been a consultant dietitian since 1986. She co-developed the Certified LEAP Therapist training program in 2006 and was one of Today’s Dietitian’s Top 10 RDs of 2014. Her writing has been published in magazines and journals, including: Today’s Dietitian, Journal of Home Health Care Management Practice, Topics in Clinical Nutrition, Sully’s Living Without Magazine and Overdrive Magazine. Aside from print, Jan has also made many TV and radio appearances. In her thirty-eight year career, she has consulted in many areas, including: hospital clinical, outpatient and food-service; long term care; home health care; drug/alcohol rehab; hospice; group homes; HMOs; WIC; prisons and jails. She has continued her private practice, at least part time since 1986, done supermarket tours, worked in research at a USDA human research laboratory and subcontracted dietitian services. In many ways, she has seen it all. She has presented at numerous National, State and District Dietetic Association meetings, including FNCE 2009 and 2014. She’s presented an ADA (now AND) sponsored Webinar, at a national PCOS conference, for the National Kidney Foundation Annual meeting and the Loma Linda Medical University Annual Post Graduate Conference.  She was the past New Jersey Dietetic Association Media Rep and had her own radio slot for a live talk show many years ago in Eastern Colorado. Jan has received the Nutritionists in Complementary Care (now Dietitians in Integrative and Functional Medicine) 2008 “Excellence in Practice Award” for her work supporting colleagues in building their practices and improving patient outcomes. Episode 038: Agricultural Economics w/ Dr. Jayson Lusk

In this tasty episode, I interview Food and Agricultural Economist, Dr. Jayson Lusk. We talk about his controversial opinions of the local food movement that challenge a lot of popular assumptions. He also provides a unique perspective on soda tax, like the one recently passed in Philadelphia, and how the obesity epidemic can be to tied to economics. Jayson’s up-beat, but realistic, approach to these controversial topics is sure to be informative and entertaining. Jayson Lusk, PhD, Food and Agricultural Economist Dr. Lusk is a food and agricultural economist who studies what we eat and why we eat it. Since 2000, he’s published more than 170 articles in peer-reviewed scientific journals on a wide assortment of topics ranging from the economics of animal welfare to consumer preferences for genetically modified food.  He’s been listed as one of the most prolific and cited food and agricultural economists of the past decade and won numerous research awards, given hundreds of lectures for businesses, nonprofits, trade industry organizations, and universities in the US and abroad, has been interviewed or published editorials in outlets such as the New York Times, Wall Street Journal, the Washington Post, Forbes.com, Foxnews.com, TIME.com, Townhall.com and the Huffington Post, and have made TV appearances on Fox and Friends, the John Stossel Show, Varney & Co., and Wall Street Journal Live, among others. Dr. Lusk serves as Regents Professor and Willard Sparks Endowed Chair in the Department of Agricultural Economics at Oklahoma State University and also serves as the Samuel Roberts Noble Distinguished Fellow at the Oklahoma Council of Public Affairs.  After earning a B.S. in Food Technology from Texas Tech University in 1997, he received a Ph.D. in Agricultural Economics from Kansas State University in 2000.  His first job out of graduate school was as an assistant professor at Mississippi State University, where he stayed for three years before moving to Purdue University as an Associate Professor.  In 2005, he accepted his current position at Oklahoma State.  In 2011, he and his family lived in Paris while he served as a visiting researcher at the French National Institute for Agricultural Research and worked on a research fellowship awarded by the Organization of Economic Cooperation and Development. Episode 037: Plant-Powered Nutrition w/ Sharon Palmer

Episode 036: The Truth about GMOs w/ Milton Stokes

In this tasty episode, I interview Milton Stokes, who is the Director of Global Health and Nutrition Outreach for Monsanto. He is also a Registered Dietitian Nutritionist and author of a new book titled Launching Your Dietetics Career. In this episode, Milton shares why he thinks big agricultural companies, such as Monsanto, have a bad reputation with the media and the public.  He also debunks many myths about GMO’s; including one I’ve heard regarding how GMOs are killing all the bees in this country. Milton also provides some out-of-box food related book recommendations that I know I’m excited to add to my summer reading list and I’m sure you will be as well. Milton Stokes, PhD, MPH, RD Milton Stokes is Director, Global Health and Nutrition Outreach for Monsanto where he engages with Registered Dietitians and other health professionals on topics pertaining to food, agriculture, and nutrition.  Before coming to Monsanto, Milton had a professorship and directed a dietetic internship at the University of Saint Joseph in West Hartford, Connecticut.  He also owned a private nutrition counseling practice with offices throughout Connecticut and is a former restaurateur. Milton was a National Media Spokesperson for the Academy of Nutrition and Dietetics in the New York City media market and a freelance writer for consumer magazines covering food, nutrition, and health.  His fourth book was a New York Times best seller, and he’s working on the 2nd edition of Launching Your Dietetics Career (to be published by the Academy of Nutrition and Dietetics, 2016). Milton began his career in clinical nutrition in New York City with a food and nutrition management company. He has served in staff and management positions along the way as well as precepted dietetic interns and students from several colleges and programs. Milton’s master’s degree is in Public Health from Hunter College and his clinical training was conducted at Yale-New Haven Hospital affiliated with Yale University School of Medicine.  Milton’s doctoral degree, from the University of Connecticut, is in Communication and Marketing with a specialization in Health Communication. Episode 033: Plenty of Fish in the Sea w/ Ray Hilborn

When I heard Ray give a presentation at a conference recently I just knew I had to have him on the show to shed some light on the doom and gloom stories we frequently hear about unsustainable fisheries and the decline in the world stock. We also discuss why fishing is actually better for the environment than agriculture, his recommendations for inexpensive and tasty fish in the United States, the difference between farm-raised and wild fish, and much more! Ray Hilborn, Professor SAFS Ray Hilborn is a Professor in the School of Aquatic and Fishery Sciences, University of Washington specializing in natural resource management and conservation. He teaches graduate and undergraduate courses in food sustainability, conservation and quantitative population dynamics.  He authored several books including “Overfishing: what everyone needs to know” (with Ulrike Hilborn) in 2012, “Quantitative fisheries stock assessment” with Carl Walters in 1992, and “The Ecological Detective: confronting models with data” with Marc Mangel, in 1997 and has published over 250 peer reviewed articles.  He serves on the Editorial Boards of numerous journals including 7 years on the Board of Reviewing Editors of Science Magazine.    He has received the Volvo Environmental Prize, the American Fisheries Societies Award of Excellence, The Ecological Society of America’s Sustainability Science Award, the International Fisheries Science Prize.    He is a Fellow of the American Fisheries Society, the Washington State Academy of Sciences, the Royal Society of Canada and the American Academy of Arts and Sciences. Episode 027: Pearls of Nutrition w/ Marie Bieber

In this tasty episode, we hear from Marie Bieber who is a self-proclaimed nutrition genius, and “all around dweeb.” Her nutritional philosophy centers around real foods that taste good and she believes butter, salt, and garlic can bring about world peace. Marie also uses her education in Psychology to help those with eating disorders by working with the Non-Profit, The Healing Connection. She is also the co-host of the Nutrition Genius Radio podcast with previous guest from episode 025, Laura Ligos. Today we talk about all these topics and much more!  Marie Bieber, BA, RD Marie Bieber, aka “Pearl,” is a real food Registered Dietitian/Nutritionist, blogger, podcast host, self-proclaimed Nutrition Genius, travel enthusiast and all around dweeb. She holds a BA in Psychology from State University of New York College at Cortland and a Post-Baccalaureate Degree in Nutrition from The Sage Colleges. She completed her dietetic practice hours with West Virginia University Healthcare and has worked as a Nutrition Assistant at Albany Medical Center. Marie has a strong focus in Medical Nutrition Therapy and takes a holistic approach to nutrition incorporating physical activity and stress management.  She currently works at The Healing Connection, a Rochester, NY nonprofit which provides hope and treatment to adolescents and adults seeking recovery from an eating disorder. Marie is fascinated by the enterohepatic circulation of bile and loves avocados so much she named her dog after them.  She loves the five second rule (because microbes make the world go ’round) and thinks butter, salt, and garlic can bring about world peace. Growing up, she used to think french fries were a sufficient lunch, pizza before practice was just a good way to carb load, and that she only needed vegetables with dinner. Marie stumbled into the nutrition world in a weird way but the second she did life just clicked. From that moment on Marie knew that she was meant to save the world with fruits and vegetables.
