Nutrition Hour with Jackson: Carbohydrates and Endurance Athletes
Episode in
Thought For Food Podcast
Trying out a new idea for a series on the podcast this week! Between school and just my nerdy interests, I read and synthesize a lot of scientific papers. So, if I find a paper that I find particularly interesting or of value and relevance to the podcast audience, I will dissect it on the show. One of the goals of this podcast is to create a more scientifically literate community so that we may wade through the murky and confusing waters of nutrition science.
First up is a review published in the journal Science written by renowned sports scientist Louise Burke. The paper, titled Swifter, higher, stronger: What’s on the menu? is a deep dive into the latest research as it relates to fueling the endurance athlete. She and her co-author John Hawley discuss carbohydrates vs. fat as fuel, supplements, relative energy deficiency in sport, and more. So I talk about it. Let me know what you think!

Let’s Talk Iron (briefly)
Episode in
Thought For Food Podcast
Iron, an essential micronutrient in human nutrition, is often discussed at length when talking about the differences between diets. Many argue that iron from animal based foods like red meat is far superior to that in plant-based foods, like beans. In some ways, that’s correct. But there’s more to the story.
In today’s podcast, I deliver a short primer on iron that sort of recaps the What’s The Deal With Iron episode we did almost exactly 2 years ago. I keep it pretty digestible and general, without diving into too much specifics. We recommend you go back and listen to What’s The Deal to get a more in depth look, and take a look at the resources I’ve linked below to learn more. At the very least, eat your lentils and molasses.

Overtraining, Protein Needs, and Vitamin K2 | Q&A
Episode in
Thought For Food Podcast
It’s been a little (long) while since we’ve recorded a Q&A podcast for the public show. Typically, it’s an exclusive reward for our Patreon community, but I felt compelled to include some of the folks in our private Facebook group. Another solo round, Aaron is off in Indianapolis at the Lifestyle Medicine Conference about to take his board exam. Charge up your crystals and align your chakras, he’ll need all the help he can get!
In today’s Q&A, I answer questions ranging from my experience with overtraining and sickness, plant-based nutrition and autoimmune disease, are avocados vegan, and plenty more. Big thanks to everyone who sent in questions — it means a lot! Enjoy your week!

Living the Ultrarunning Dream on Plants with Lucy Bartholomew
Episode in
Thought For Food Podcast
Lucy Bartholomew is living the dream. A 22 year old ultrarunner hailing from Australia, Lucy is traveling the world, crushing it at huge races like the Ultra Trail Cape Town and Western States 100. She’s also a passionate plant-pusher, and crushes plant-based feasts almost as much as the trails. I had the pleasure and honor of sitting down with Lucy to talk life on the road as a vegan ultrarunner, and why we should all be practicing “gratitudes and greats”.
Lucy is a shining example of the Thought For Food Lifestyle and one of the most glowing and positive humans I’ve sat down with in a long time. I can’t wait to keep following her crazy adventures, and I hope this conversation inspires you to get out and do epic shit (and take epic dumps).

Heart Disease and Hard Ons with Dr. Joel Kahn
Episode in
Thought For Food Podcast
This week, we’re honored to be graced with the legend of cardiology, Dr. Joel Kahn. Dr. Kahn is an integrative cardiologist that decided to adopt a plant-based diet after looking into the research and connections between nutrition and disease, and has never looked back. He focuses now on education; Joel is the author of several books including his latest The Plant-Based Solution. We talk about the main pillars for why a plant-based diet is the way to go for preventing disease, dive deep into heart health, and yes, boners. We hope this conversation teaches you a thing or two!

How to Survive College on a Plant-Based Diet 2.0
Episode in
Thought For Food Podcast
Back in the early days of the podcast, Jackson recorded a solo episode on surviving the college experience on a plant-based diet. It’s an important discussion point and something that we get TONS of questions about. So we decided to rehash the topic and have Aaron join in on the conversation to discuss the social and practical aspects of eating plant-based in the fray of college living. We hope you enjoy!

How to Eat for the Planet with Nil Zacharias
Episode in
Thought For Food Podcast
One of the most shocking realizations we’ve come to in recent years is the true environmental impacts that modern-day animal agriculture has on our environment. While we spend most of our time at Thought For Food discussing the nutritional and lifestyle aspects of our food choices, we typically don’t delve too deeply into the ethical and environmental components (notably because we aren’t trained in those areas). The reality is that we are in a dire situation when it comes to our planet’s health. From land and water use, to rainforest deforestation and ocean acidification, to species loss and desertification, the environmental effects that our food choices have is a truly pressing matter.
This week on the podcast we’re pleased to bring Nil Zacharias in to talk about these things. A lawyer by training, Nil woke up to the impacts our food choices have on our planet and began eating a plant-based diet, which launched him into a passion for using media and communication to change the world for the better. He’s the founder and editor in chief of One Green Planet, an online media company dedicated to sharing news and resources surrounding eating and living an environmentally friendly lifestyle. He has a brand new book out, titled Eat for the Planet: Saving the World One Bite at a Time. This short but lethally effective synopsis of the environmental impacts of animal agriculture is rich with graphics, mind-boggling stats, and an evidence-based approach to eating and living more in line with our values. We highly recommend picking it up!
In this conversation, we talk about everything from Nil’s background as a media lawyer and how his transition to eating more plants led to his current mission of saving the planet, to some of the more interesting and important facts about animal agriculture and diet’s role on our world. We dig deep into a broad range of topics, and we promise you’ll walk away with a newfound appreciation for the link between diet and our world.
For more on Nil and his work, be sure to check out One Green Planet and his fantastic podcast, #EatForThePlanet.
Enjoy the show!
